Monkey Bread Muffins


Ingredients

 

Monkey Bread Dough:

  • 3 cups almond flour
  • 5 tbsp tapioca flour
  • 2 tsp baking powder
  • 3 tbsp melted coconut oil
  • 1 tbsp maple syrup
  • 2 tsp Rising Star Cinnamon Baker's Syrup
  • 1 cup milk + 2 tsp ACV
  • 1 tbsp coconut sugar

Cinnamon  Sugar Mixture:

  • 1 tbsp cinnamon
  • 1/3 cup coconut sugar

Drizzle/Sauce:

  • 1 1/2 tbsp melted butter
  • 2 tbsp maple syrup
  • 1 tsp Rising Star Cinnamon Baker's Syrup

 

Instructions

  1. Preheat oven to 350°F and line a muffin pan with muffin liners. Mix dry ingredients. Stir in wet ingredients until combined.
  2. Begin rolling dough into balls about 1 tbsp in size. Roll each ball of dough into the cinnamon sugar mixture and place 3 in each muffin tin.
  3. Mix up the sauce and pour evenly over each muffin tin. Bake for about 23-25 minutes.
  4. Let cool before adding icing drizzle. Enjoy!
