Salted Caramel Cheesecake Bites


Ingredients

 

Filling:

  • 1 cup Greek yogurt (I used non-fat)
  • 1 cup cream cheese
  • 2 eggs
  • ⅔ cup sweetener
  • ¼ cup flour
  • 2 tablespoons @risingstarbaking salted caramel baker’s syrup
  • 1 tsp @risingstarbaking pure vanilla extract
  • 1/4 tsp salt

Base:

  • 6 graham crackers (crushed/blended into a powder)
  • 2-3 tablespoons almond butter (add more if needed)
  • 2 tablespoons maple syrup - add more if needed

Instructions

  1. Preheat your oven to @325F
  2. Pour all the ingredients for the cheesecake filling in a bowl and blend (I used a hand blender but you can also transfer the ingredients to a blender)
  3. Make your graham cracker crust by crushing your graham crackers into a fine powder and mixing in the almond butter and maple syrup
  4. Flatten your graham cracker crust on the bottom of a silicone muffin mold
  5. Pour in your cheesecake batter
  6. Bake @325F for 20 minutes
  7. Let it cool and remove from the molds
  8. (optional) top with caramel & enjoy!
