Old Fashioned Matcha Donut Loaf


Ingredients

 

Loaf:

  • 260 g all-purpose flour (2 cups + 2 tbsp)
  • 12 g cornstarch (1 tbsp + 2 tsp)
  • 1¾ tsp baking powder
  • ⅛ tsp baking soda
  • 1 tsp fine sea salt
  • 10 g Jade matcha powder (or similar quality)
  • 5 g non-diastatic malt powder
  • 185 g granulated sugar (scant 1 cup)
  • 35 g light brown sugar (2 tbsp + 2 tsp)
  • 70 g neutral oil (⅓ cup)
  • 50 g melted butter (3½ tbsp) (I use Country Crock Plant Butter Sticks)
  • 200 g plain unsweetened yogurt (scant ¾ cup + 2 tbsp) (I use Forager)
  • 135 g milk (½ cup + 2 tbsp) (I use Silk)
  • 10 g Rising Star matcha baker’s syrup
  • 2 tsp Rising Star vanilla bean paste
  • ½ tsp apple cider vinegar

Vanilla Glaze:

  • 220 g powdered sugar (1¾ cups), sifted
  • 50 g (scant 1/4 cup) milk
  • ½ tsp Rising Star vanilla bean paste
  • Tiny pinch fine sea salt

Drizzle for each slice:

  • Rising Star matcha baker’s syrup

 

Instructions

  1. Preheat oven to 350°F (175°C). Grease and fully line two 7.75 x 3.75-inch loaf pans with parchment.
  2. In a large bowl, whisk both sugars and wet ingredients together.
  3. Add the all-purpose flour, cornstarch, baking powder, baking soda, salt, matcha powder, and malt powder directly into the same bowl.
  4. Whisk just until fully combined and no dry streaks remain. Do not over mix.
  5. Divide evenly between prepared pans and smooth the tops flat.
  6. Bake for 30 minutes, tenting loosely with foil if needed once the tops are set and lightly colored.
  7. The loaves are done when a tester inserted into the center comes out clean or with a few moist crumbs.
  8. Cool in the pans for 20 minutes, then transfer to a wire rack.
  9. Prepare the glaze by whisking all ingredients.
  10. Pour glaze over warm loaves; cover all sides.
  11. Chill until glaze is completely set.
