Nutella-Stuffed Monster Cookies

12 Cookies

Ingredients

  • 1 cup AP flour (135g)
  • 1/4 cup Rising Star Cocoa Powder (28g)
  • 1/2 tsp baking powder
  • 3/4 tsp salt
  • 3/4 cup brown sugar (165g)
  • 1/4 cup granulated sugar (50g)
  • 1/2 cup (1 stick) salted butter, softened
  • 1 egg, room temperature
  • 1 tsp vanilla extract
  • 1 1/4 cup chopped Halloween Oreos
  • Eyeball candies
  • Nutella, scooped into 12 1/2 tbs blobs and frozen 

Instructions

1. With a hand mixer, cream together butter, brown sugar, and granulated sugar until fluffy, about two minutes.  Add egg and vanilla and mix until just combined. 

2. Scrape down the sides of the bowl and add flour, baking powder, salt, and Rising Star Cocoa Powder.  Mix until just combined and there are no visible streaks.  Fold in chopped Oreos.  Cover the mixing bowl with plastic wrap and refrigerate for one hour.  

3. Meanwhile, prepare your Nutella by scooping out 12 1/2 tbs "blobs" and placing them on the parchment paper.  Transfer your blobs to the freezer while you wait for your dough.  Preheat oven to 350F and line two baking sheets with parchment paper for the cookies. 

4. Once the dough is ready, use a 2 oz cookie scoop and scoop cookies into a ball, then flatten out with your hands.  Place a Nutella blob in the center of the flattened cookie, then pinch the sides of the cookie up and roll into a ball.  Press more chopped Oreo pieces on top of each cookie.  Place 6 cookies on each baking sheet, spaced far and evenly, and bake for 12 minutes.  

6. Press eyeball candies into each cookie after baking (they will melt in the oven).  Let cool on the baking sheet for 5 minutes, then transfer to a cooling rack to let cookies cool completely before enjoying.
