Mocha Brownies

Mocha Brownies

Makes one 8x8 pan of brownies (12-16 brownies, depending on size)

Ingredients

  • 1 cup unsalted butter, melted (226g)
  • 1 ½ cups granulated sugar (300g)
  • ½ cup light brown sugar (110g)
  • ¾ cup Rising Star Cocoa Powder
  • 3 large eggs, room temperature
  • 1 tablespoon Rising Star Vanilla Bean Paste
  • 1 teaspoon salt
  • 1 teaspoon espresso powder
  • ½ teaspoon baking powder
  • 1 cup all-purpose flour (120g)
  • 1 cup dark chocolate chunks (180g)

For the espresso frosting: 

  • ⅓ cup unsalted butter, room temperature
  • 1 ½ teaspoon espresso powder
  • 1 teaspoon Rising Star Vanilla Bean Paste
  • 2 cups powdered sugar
  • 3 tablespoons heavy cream 

Instructions

1. Preheat the oven to 350F.

2. Spray a 8x8 baking pan with nonstick spray and line with parchment paper, set aside. 

3. In a large mixing bowl, add melted butter and both sugars and whisk until combined. Add the eggs and vanilla bean extract and mix until light and airy. 

4. Next, using a spatula, mix in all the dry ingredients stopping just before the ingredients are fully incorporated. 

5. Lastly, add in the dark chocolate chunks and mix until combined.

6. Spread evenly in the prepared baking pan. Bake for 35-40 minutes, don’t overbake! 

7. Set aside to cool completely while making the espresso frosting. 


Mocha Frosting:

1. In a medium-sized bowl using a hand held mixer, place all ingredients in the bowl and blend together.

2. Start slow and increase speed once the ingredients are combined to prevent a mess. Beat until light and fluffy. 

3. Spread evenly over cooled brownies and enjoy!
