Mocha Brownies
Makes one 8x8 pan of brownies (12-16 brownies, depending on size)
Ingredients
- 1 cup unsalted butter, melted (226g)
- 1 ½ cups granulated sugar (300g)
- ½ cup light brown sugar (110g)
- ¾ cup Rising Star Cocoa Powder
- 3 large eggs, room temperature
- 1 tablespoon Rising Star Vanilla Bean Paste
- 1 teaspoon salt
- 1 teaspoon espresso powder
- ½ teaspoon baking powder
- 1 cup all-purpose flour (120g)
- 1 cup dark chocolate chunks (180g)
For the espresso frosting:
- ⅓ cup unsalted butter, room temperature
- 1 ½ teaspoon espresso powder
- 1 teaspoon Rising Star Vanilla Bean Paste
- 2 cups powdered sugar
- 3 tablespoons heavy cream
