Cinnamon Coffee Cake


Ingredients

 

Cinnamon  Crumb Mixture:

  • 2/3 cup brown sugar, packed
  • 1 1/4 cup plus all-purpose flour
  • 2 Tbsp Rising Star Cinnamon Baker's Syrup
  • 6 Tbsp (85g) butter, cold and diced

Cake:

  • 1 1/3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (113g) butter, softened to room temp
  • 3/4 cup granulated sugar
  • 2 eggs 
  • 1 Tbsp Rising Star Vanilla Bean Paste
  • 1/2 cup (120g) sour cream
  • 3 Tbsp milk of your choice

Icing:

  • 1 cup powdered sugar, sifted
  • 1 Tbsp @risingstarbaking Cinnamon Baker’s Syrup
  • 2 Tbsp milk of your choice

 

Instructions

  1. Preheat oven to 350°F. Line an 8-inch square pan with parchment paper (leave an overhang for easy removal.
  2. Crumb Mixture: in a medium bowl, combine the brown sugar and flour. Drizzle cinnamon syrup over dry mix. Add butter and incorporate until mixture resembles crumbs. Refrigerate until needed.
  3. Cake: in a large bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  4. Cream the butter and sugar until light and fluffy. Add flax eggs and vanilla bean paste. Mix to  combine. Add sour cream and mix again.
  5. Add the dry flour mixture then mix to combine again. Finally, add 4 Tbsp milk. Do not overmix.
  6. Spread about half of the batter into the prepared pan. Then sprinkle half of the crumb mixture on top.  Repeat with remaining batter and crumb mixture.
  7. Bake for 35–40 minutes or until a toothpick can be inserted and come out clean. Remove and let cool.
  8. While cooling, add all icing ingredients to a bowl and whisk together. Drizzle over cooled cake then serve after cutting into 6 squares.
