Cherry Almond Tart


Ingredients

 

Crust:

  • 3/4 cup all-purpose flour
  • 1/2 cup fine almond flour
  • 1/4 cup cornstarch
  • 1/2 cup powdered sugar
  • 1/2 tsp kosher salt
  • 8 tbsp butter, melted
  • 1 tsp almond extract
  • 1 tbsp vanilla bean paste
  • 2 tbsp water

Almond Franginpane:

  • 1 1/4 cups fine almond flour
  • 1 cup granulated sugar
  • 1/2 tsp kosher salt
  • 1 tsp almond extract
  • 1 tsp Rising Star Vanilla Bean Paste 
  • 8 tbsp unsalted butter, softened
  • 2 large eggs, room temperature
  • 2 tbsp heavy cream
  • 2 tbsp all-purpose flour

 

  • 2 cups of cherries, whole and pitted
  • 1/2 cup sliced almonds

 

Instructions

  1. Place all ingredients in a bowl and mix until a soft dough forms. Press evenly into a 9 inch tart pan with nonstick spray. Chill for 30 minutes. Preheat the oven, place a piece of parchment paper with solid beans on top of the unbaked tart, bake at 375 for 16-18 minutes, remove weights, return to the oven and bake for an additional 6 minutes. 
  2. Lower oven temperature to 350, layer the Almond Frangipane on top, place whole cherries scattered on top, sprinkle sliced almonds, bake for 30-35 minutes or until the layer is golden and puffy. 
  3. Dust with powdered sugar if desired.
