White Chocolate Salted Caramel Mini Banana Bread Loaves

Ingredients


Loaves:

  • 2 medium ripe bananas (about 1 cup mashed)⁠
  • 2 large eggs, room temperature⁠
  • ⅓ cup unsalted butter, melted and slightly cooled⁠
  • ½ cup sugar⁠
  • ¼ cup Rising Star Salted Caramel Baker’s Syrup⁠
  • 2 tsp Rising Star Vanilla Bean Paste⁠
  • 1½ cups GF flour⁠
  • 1½ tsp baking powder⁠
  • ½ tsp baking soda⁠
  • ½ tsp cinnamon⁠
  • ½ tsp sea salt⁠
  • 2 tbsp salted caramel sauce (plus more is optional)⁠
  • Chopped white chocolate for garnish⁠

Salted Caramel Sauce:

  • 1 cup cane sugar⁠
  • ¼ cup water⁠
  • 4 tbsp unsalted butter⁠
  • ½ cup warm heavy cream⁠
  • 2 tbsp Rising Star Salted Caramel Baker’s Syrup⁠
  • 1 tsp Rising Star Vanilla Bean Paste⁠
  • Pinch of flaky sea salt⁠


Instructions

  1. Preheat the oven to 350°F and grease your mini loaves pan with parchment paper.⁠

  2. In a large bowl, mash the bananas until smooth. Whisk in the eggs until fully combined. Add the cane sugar and then whisk in the melted butter, Rising Star Salted Caramel Baker’s Syrup, 1-2 tbsp of the homemade caramel sauce, and vanilla until smooth.⁠

  3. Add the flour, baking powder, baking soda, cinnamon, and salt. Fold everything together with a spatula just until no streaks of flour remain and do not overmix. Spread the batter evenly into the prepared pan. Optional to add a few drizzles of the homemade caramel over the loaves.

  4. Bake for 15-20 minutes or until the tops are lightly golden and a toothpick inserted in the center comes out with a few moist crumbs. Allow the bars to cool in the pan for about 15 minutes, then transfer them to a cooling rack. Enjoy while warm!⁠

Note:

  • If the batter seems very thick, stir in 1-2 tablespoons of milk (gradually, as needed) until it's thick but spreadable (should be like cake batter).⁠
