
Orange Mascarpone Topping
Makes 4-6 servings
Ingredients:
Orange Curd:

3 whole eggs

3 egg yolks

⅓ cup granulated sugar

Zest of 1 navel orange

Juice of 2 navel oranges

Juice of 1 lemon
-
1 tbsp orange blossom water (optional)

½ cup unsalted butter, softened and cut into pieces
Mascarpone Topping:

8 oz mascarpone cheese
-
1/4 cup powdered sugar
-
1/4 cup orange curd
-
1-2 tsp Rising Star Vanilla Bean Paste
Garnishes:
-
Orange slices
-
Chopped pistachios
-
Drizzle of Rising Star Vanilla Bean Paste
Instructions

Make the Orange Curd: Bring a pot of water to a simmer. In a large heatproof mixing bowl, whisk together 3 whole eggs, 3 egg yolks, and ⅓ cup granulated sugar. Add the zest of 1 navel orange, the juice of 2 oranges, and the juice of 1 lemon. Whisk until combined. Place the mixing bowl over the pot of simmering water and cook the curd, continuously mixing until it’s slightly thick and coats the back of a spoon. It will foam up at first, then slowly thicken. Remove from heat and whisk in ½ cup of softened, sliced unsalted butter. Strain the curd using a sieve, then transfer to a glass storage container and chill for at least 2 hours.

Make the Orange Mascarpone Topping: In a mixing bowl, add 8 oz mascarpone cheese, ¼ cup powdered sugar, ¼ cup orange curd, and 1–2 tsp Rising Star Vanilla Bean Paste. Using a spatula, very gently fold everything together until smooth and combined. Do not over mix.

To serve: Make waffles using a waffle maker or toast ready-made waffles in a pop-up toaster. Place the waffle on a serving plate and use a piping bag to pipe a generous amount of the orange mascarpone topping. Top with 2–3 orange slices, some chopped pistachios, and a drizzle of Rising Star Vanilla Bean Paste. Serve immediately and enjoy!
